Ingredients
  

  • 1 box (8.5 oz) cornbread mix
  • 1 can (15 oz) whole kernel corn, drained
  • 1 can (15 oz) creamed corn
  • 1 cup sour cream
  • ½ cup unsalted butter, melted
  • ¼ cup sugar (optional, for added sweetness)
  • 2 large eggs

Instructions
 

  • Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish or a similar casserole dish.
  • Mix the Ingredients: In a large mixing bowl, combine the cornbread mix, whole kernel corn, creamed corn, sour cream, melted butter, sugar (if using), and eggs. Stir until well combined.
  • Pour into the Baking Dish: Pour the mixture into the prepared baking dish and spread it evenly.
  • Bake: Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  • Cool and Serve: Allow the cornbread pudding to cool for 5-10 minutes before serving. Serve warm as a side dish or dessert.
